Prefer your locally sourced produce with a side-serve of Indian Ocean? How about a few hours aboard a luxury cruiser with one of Western Australia’s culinary superstars?
At this year’s Gourmet Escape, Bib’s very own star chef, Scott Bridger, got the opportunity to treat a select few to a fresher-than-fresh feast of canapes aboard the Kimberley Quest II, a custom-built 25 metre vessel offering comfort and style, all thanks to Audi Centre Perth.
The pristine waters of Geographe Bay was the location as those on board got to sample delectable dishes accompanied by premium Margaret River wines whilst they leisurely cruised the southern coastline.
A champion of local ingredients, Scott has been a long-time fan of the South-West and its produce, utilising it in a number of our delicious dishes here at Bib:
“We have to come down here to get produce, it’s all grown in this region. A lot of the fruit and vegetables are grown down here, because it’s got more rainfall than we do in Perth. The marron is amazing. The truffles in Manjimup. I could sit here all day! We use about 80 per cent WA produce in the restaurant and a lot of it comes from the South West.”
It’s practices likes these, that are reflective of our ongoing efforts at the restaurant to continually support local WA suppliers and place sustainability back on the menu.
